Almost 100 studies of antioxidants, primarily Vitamin E, have shown that it can inhibit oxidation, plaque build-up, and blood clotting. In fact, Vitamin E levels can be more predictive of the potential for heart disease than cholesterol. In one study, high cholesterol predicted heart disease 29 percent of the time, but low Vitamin E predicted it almost 70 percent of the time. Vitamin E may play a role in improving glucose tolerance and insulin sensitivity, making it doubly important for people with blood-sugar imbalance, which increase risk of heart disease. Immune-System Health Vitamin E also appears to offer protection against certain cancers. One study showed that individuals with low Vitamin E levels had a 50 percent greater chance of developing cancer than individuals with high levels.
